Falling Chocolate Cake

Serves 4:

Ingredients:

6 oz. bittersweet chocolate, coarsely chopped

1 stick unsalted butter

1/2 C sugar

1/4 C flour

3 eggs

1/2 t pure vanilla extract

Instructions:

Preheat over to 350 degrees.  Butter and flour four 8 oz. ramekins

Place the chocolate and butter in a double boiler over simmering water and stir until melted.  Set aside to cool.

Place the sugar, flour and eggs in a bowl and beat until fluffy, about 5 minutes.  Gently beat in the cooled chocolate and vanilla.

Pour the batter into the prepared ramekins, filling them about 3/4 the way up the sides.  Bake until they begin to puff up, 18 to 22 minutes.

Run a knife around the edge of each ramekin and turn them upside down on a plate to unmold.  Serve with vanilla ice cream.
