Fudge Brownies

1/2 Cup plus 2 Tablespoons (1 stick plus 2T) unsalted butter

5 oz. Bittersweet or Semisweet Chocolate, broken up or chopped

2/3 Cup Flour

1 ½ T Cocoa Powder       

¼ teaspoon Salt

1 Cup Sugar

1/3 Cup Brown Sugar

3 Eggs

2 ½ teaspoons Vanilla Extract

Preheat the over to 350 degrees.  Lightly grease an 8 inch square baking pan.  Line the pan with aluminum foil, letting the foil overhang two opposing sides of the pan.  Grease the foil or coat with nonstick spray.

In a microwave safe bowl, microwave the butter and chocolate on full power for one minute.  Stir well.  Continue microwaving at 50 percent power in 30 second intervals until the chocolate is almost melted.  Stir the mixture until the chocolate is melted and let cool for a couple minutes.

In a small bowl, stir together the flour, cocoa powder, and salt; set aside.  Whisk the sugar and brown sugar into the chocolate-butter mixture until well combined.  Add the eggs and vanilla and whisk until the mixture is smooth.  Whisk in the flour mixture just until evenly incorporated.  Turn out the batter into the baking pan.

Bake in the middle of the oven for 30 to 35 minutes.  The center will be almost firm and a toothpick will be clean except for the bottom ¼ inch.  Transfer the pan to a wire rack to cool.  Use a butter knife to loosen the edges from the pan and remove by lifting the foil.
